Vinous Stephen Tanzer - 01 Jul 16
Flint, crushed rock, menthol, white pepper and mint on the nose, plus a saline whiff of chicken broth. Seamless and fine-grained, offering a captivating combination of salinity and sucrosité. This seems much more open than a barrel sample was a year ago. Finishes suave, ripe and long, with terrific floral complexity and lift; for all its sweetness this wine is bone dry.

Chablis

Chablis, the northernmost Burgundy region, is famed for its crisp, mineral-driven Chardonnay wines. Unlike rich, oaky Chardonnays, Chablis wines, influenced by the cool climate and limestone-rich soils, feature vibrant acidity and flavours of green apple, citrus, and flint. Ideal with seafood, especially oysters, Chablis wines come in four appellations: Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru. Esteemed producers like Domaine William Fèvre, François Raveneau, and Vincent Dauvissat are known for their classic, terroir-expressive wines.
